Pisco grapes only grow in Peru, the land of the Incas, Machu Picchu, Nazca Lines and other wonders of the World. Try it in a delicious Pisco Sour, or a refreshing Chilcano or Pisco Punch. Today our Pisco is Peru´s flagship drink, a spirit gaining each day more international recognition and fans. Around the mid-19th century, Pisco arrived to the coast of San Francisco during the gold rush. In 1878, one of the most famous bars was the Bank Exchange, a magnificently appointed saloon, paved with marble and decorated with oil paintings valued at hundreds of thousands of dollars. The Bank Exchange was especially noted for Pisco Punch, invented by Duncan Nichol. During the eighteen-seventies it was by far the most popular drink in San Francisco, even though it was sold for twenty-five cents a glass, a high price for those days. The secret of its preparation died with Nichol, as he would never divulge it. But descriptions of San Francisco from this period abound with lyrical accounts of its flavor and potency, and it must have been the creme de la creme of beverages. Its base was Pisco, a brandy distilled from the Italia grape. And the brandy itself, even without the other ingredients which made it into punch, must have been something to write about. Rudyard Kipling, the celebrated author of The Jungle Book, described pisco as “the highest and noblest product of the age. I have a theory it is composed of cherubs wings, the glory of tropical dawn, the red clouds of sunset, and fragments of lost masterpieces by dead poets." Say no more. We are a state-of-the-art Pisco producer from Peru. Our brand Don Alvaro has been recognized with many awards in several Spirits Competitions held recently in the USA and Europe. Don Alvaro Piscos are produced once a year, during April, after selecting the best quality grapes grown in Ica, a sunny location 300 kms. south of Lima, by our experts and technical personnel with loving care and patience, in order to obtain the best quality spirits. Because of its uniqueness, the amount of grape kilos involved and the artisan process of its production, our Piscos can only be compared with the best Cognac Brands in the world. Don Alvaro Piscos are 100% grape content, completely natural, with no additives or any other component different than the grape juice obtained before the distilling process. That is why Piscos Don Alvaro are orientated for customers who demand the highest quality, renowned brands and the best of their class. With 42% of alcohol content as a result of the distilling process, Piscos can only be elaborated from certain types of grapes that grow exclusively in some areas of Peru. There are four types of Pisco officially recognized: Pure; made from non aromatic grapes only, mainly Quebranta or Mollar grapes Acholado; made from mixing different types of grapes (Blended) Aromatico; made from aromatic grapes only, mainly Italy, Moscatel or Torontel grapes Mosto Verde; obtained from an incomplete fermentation process (Green Malt). For producing this type of Pisco the amount of grapes required has to be doubled (About 14 kilos of grapes against 7 kilos required for distilling any other type of Pisco).
